Ingredients
  

  • 1 lb ground beef
  • 16 oz Velveeta cheese cubed
  • 1 can 10–16 oz Ro-Tel diced tomatoes and green chilies (undrained)

Instructions
 

Step 1: Cook the Beef

  • Heat a skillet over medium heat.
  • Add ground beef and cook until fully browned.
  • Drain excess grease to avoid a greasy dip.

Step 2: Melt the Cheese

  • Reduce heat to low.
  • Add cubed Velveeta cheese to the skillet.
  • Stir slowly until the cheese begins to melt.

Step 3: Add the Rotel

  • Pour in the entire can of Ro-Tel (including liquid).
  • Stir well to combine all ingredients.

Step 4: Mix Until Smooth

  • Continue stirring until the dip is fully melted and creamy.
  • If too thick, add a splash of milk to loosen it.

Step 5: Serve Warm

  • Transfer to a serving bowl or slow cooker.
  • Serve immediately with chips, crackers, or veggies.
