Ingredients
  

For the Cookies

  • 1 can 15 oz chickpeas (rinsed & drained)
  • ½ cup natural peanut butter or almond butter
  • cup maple syrup or honey
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • Pinch of salt

Add-Ins (Optional)

  • cup dark chocolate chips 🍫
  • Chopped nuts walnuts, almonds
  • 1 tbsp chia seeds or flaxseeds
  • Cinnamon or nutmeg

Instructions
 

Step 1: Prepare the Base

  • Add chickpeas, nut butter, maple syrup, and vanilla to a food processor
  • Blend until completely smooth and creamy

Step 2: Mix the Dough

  • Transfer mixture to a bowl
  • Add baking soda and salt
  • Fold in chocolate chips and optional add-ins

Step 3: Shape the Cookies

  • Scoop small portions onto a lined baking sheet
  • Flatten slightly (they won’t spread much)

Step 4: Bake

  • Preheat oven to 180°C (350°F)
  • Bake for 12–15 minutes
  • Let cool for 5 minutes before serving
