Ingredients
  

Basic Batter:

  • 1 cup all-purpose flour 120g
  • 2 tablespoons sugar
  • 1 cup milk 250ml
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • Pinch of salt
  • 2 tablespoons butter for cooking

Optional Add-ins:

  • ¼ cup chocolate chips or fresh berries
  • 1 teaspoon lemon zest or cinnamon
  • 2 tablespoons chopped nuts

Instructions
 

Mix the Batter:

  • In a bowl, whisk together eggs and sugar until fluffy.
  • Add milk and vanilla extract, then gradually mix in flour, baking powder, and salt.
  • Whisk until smooth and lump-free.

Heat the Pan:

  • Preheat a nonstick skillet over medium-low heat.
  • Add a bit of butter and allow it to melt evenly.

Cook the Batter:

  • Pour a thin layer of batter into the skillet (about 1 cm thick).
  • Let it cook undisturbed for 30–45 seconds.

Scramble and Stir:

  • Use a spatula to gently break and scramble the pancake as it cooks.
  • Continue stirring and flipping until all pieces are golden and cooked through (around 2–3 minutes).

Repeat & Serve:

  • Repeat with remaining batter.
  • Serve warm with your favorite toppings like powdered sugar, maple syrup, or fruit.
