Ingredients

  • 2 ¼ cups 280g all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup 170g unsalted butter, softened
  • ¾ cup 150g granulated sugar
  • ¼ cup 50g brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 tbsp lemon zest optional, for spring flavor
  • ½ cup dried fruit raisins, cranberries, or currants or white chocolate chips

Instructions
 

Step 1: Prepare the Dough

  • In a bowl, whisk flour, baking soda, and salt.
  • In another bowl, cream butter and sugars until light and fluffy.

Step 2: Add Wet Ingredients

  • Mix in egg and vanilla extract.
  • Add lemon zest for a fresh spring flavor.

Step 3: Combine

  • Gradually add dry ingredients to wet mixture.
  • Mix until just combined.
  • Fold in dried fruits or chocolate chips.

Step 4: Chill Dough

  • Cover and chill dough for 30 minutes.
  • This helps cookies keep their shape.

Step 5: Shape Cookies

  • Preheat oven to 180°C (350°F).
  • Scoop dough into balls and place on lined baking sheet.

Step 6: Bake

  • Bake for 10–12 minutes until edges are lightly golden.
  • Centers should remain soft.

Step 7: Cool

  • Let cookies cool on baking sheet for 5 minutes.
  • Transfer to a rack to cool completely.
