Ingredients
  

For the Summer Cake Base

  • 2 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup butter room temperature
  • 1 ¾ cups sugar
  • 4 eggs room temperature
  • 1 cup milk or buttermilk
  • 1 tsp vanilla extract
  • Zest of 1 lemon or orange

For the Frosting

  • 1 ½ cups heavy whipping cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

For Topping & Flavor

  • Fresh strawberries 🍓

  • Peaches or mango slices
  • Fresh mint or basil leaves 🌿

Instructions
 

Step 1: Prepare Ingredients & Oven

  • Preheat oven to 350°F (175°C)
  • Bring butter, eggs, and milk to room temperature
  • Grease and line cake pans

Step 2: Make the Batter

  • Mix flour, baking powder, and salt
  • Cream butter and sugar until light and fluffy
  • Add eggs one at a time
  • Mix in vanilla and citrus zest
  • Alternate adding dry ingredients and milk
  • Mix until just combined

Step 3: Bake the Cake

  • Divide batter into pans
  • Bake 30–35 minutes
  • Check with toothpick (few moist crumbs = perfect)
  • Cool completely

Step 4: Prepare Frosting

  • Whip heavy cream with powdered sugar
  • Add vanilla extract
  • Beat until soft peaks form

Step 5: Assemble the Cake

  • Level cake layers
  • Add whipped cream between layers
