For the Donuts:
- 210 g all-purpose flour ~1 ¾ cups
- 50 g cocoa powder unsweetened
- 2 tsp baking powder
- ½ tsp salt
- 100 g granulated sugar ~½ cup
- 1 large egg
- 120 ml buttermilk ~½ cup
- 40 g unsalted butter melted (~3 tbsp)
- 1 tsp vanilla extract
For Frying:
- Canola or vegetable oil enough for 2–3 inches depth
For the Chocolate Glaze:
- 1 ½ cups powdered sugar
- ¼ cup Dutch process cocoa powder
- ¼ cup salted butter melted
- 2 –3 tbsp hot water adjust for consistency

Make the Dough
In a bowl, whisk flour, cocoa, baking powder, and salt.
In another bowl, whisk sugar, egg, buttermilk, melted butter, and vanilla.
Combine wet and dry ingredients until a soft dough forms.
Wrap and chill dough in the fridge for 1 hour (makes cutting easier).
Cut and Prepare for Frying
Fry the Donuts
Heat oil to 365°F–375°F (185°C–190°C).
Fry 2–3 donuts at a time for 1–2 minutes per side until golden brown.
Drain on a paper towel–lined wire rack.
Make the Glaze
In a bowl, whisk together powdered sugar, cocoa, melted butter, and hot water until smooth and glossy.
Glaze and Decorate
Dip cooled donuts into glaze. Let excess drip off.
Add toppings immediately while glaze is wet.
Let sit 15–20 minutes to set.
